Muscovy Duck
If you've never eaten Muscovy, you should know that it's really something. Muscovy is not at all greasy like some other breeds, it has a fine texture, very little fat, and a unique and delicious flavour. It is one of the finest duck there is.
Muscovies are the only domestic ducks that aren't derived from mallard.
They originate from South America and they're tree birds rather than water birds. So they don't need a pond to swim in (they do need water, but a large basin will do). The meat yield is higher than any other duck, with 50% more breast meat, which is 98% lean, and the skin has 50% less fat than other ducks. A large drake can weigh up to 15lb and a duck as much as 10lb.
Muscovys lay upto 195 eggs each year, giving us an ongoing supply of fresh duck eggs for sale.

Ringneck PheasantPerhaps the most well-known game bird throughout the world and in bygone days in England would be seen hanging as a fully feathered brace in the butcher's shop window which was said to improve the flavour along with the lead shot.
Originally from China the pheasant became established in Europe then by late 1800s North America.
The male has a dark head, with a distinct white ring around the neck, a dark red breast, with varying colourful patterns on the wings, back and its long tail feathers. The female is a light brown with varied darker patterns on the whole of her body.
The meat is popular in high end restaruants with a mild distinct gamey flavour.
